Green Chillies 2-3
Fresh coriander / Cilantro a handful
Dry roasted Cumin Seeds 2 tsp (crushed)
Red Chilly Powder 1/2 tsp
Turmeric Powder 1/2 tsp
Salt To taste
Minced Ginger 1 tsp
Oil for frying
How to make the Poha vada (Poha Cutlets)
Method
Wash the Poha very nicely and strain all the water.
Once all the water is removed, mash the poha with your hands to make it smooth in texture. Transfer the mashed poha to a mixing bowl.
Mash the boiled potato and add it to the Poha.
Now add the finely chopped green chilies, minced ginger, finely chopped coriander leaves, Turmeric powder, red chilly powder, and salt to the Poha and Potato mixture.
Mix everything very well so that the mixture combines together to form a ball.
Now take small portions and shape your cutlets in your desired shape. Do not add water to the mixture as moisture will scatter the Poha vadas while frying.
When all the vadas are made, refrigerate them for 20-25 minutes. Skip this step if you don’t have enough time.
In a nonstick pan, add 2 tbsp of oil.
When the oil becomes the hot place the cutlets in the pan and shallow fry in medium heat.
Flip the sides and fry well from the other side as well. Drizzle some more oil if you feel the need.
Yummy shallow fried Poha vada is ready, serve it hot with green chutney or tomato ketchup.
